I've built several systems with epox nforce boards... however, not with amd64. generally, i think the epox boards are very high quality, have been extremely stable and reliable and have packed in a lot of features for a good price.
I'm not completely sure building an AMD XP system is out of the question... the boards are still a lot cheaper, though the processors now are only like 20 bucks difference between, say, the XP 2800+ and the amd64 2800+ -- depends on how tight your budget is. If it isn't all that tight, 64 is the way to go. 3GB of RAM should not be a problem with any modern board..
