You might want to take a look at "transcode":

I found this from using the program "DVD::RIP":
http://www.exit1.org/dvdrip/

So far I've found it works with a LOT of different codecs.  Only
downside is there are a lot of dependencies to resolve to deal with all
those codecs.  But, once installed, it can do a LOT.
