Maildir, in and of itself, suffers from it's own problems and it not the panacea people seem to want to believe it is.
That said, courier would be an improvement over WU-IMAP, but there are much easier solutions. I believe that dovecot would probably be the simplest to switch to from WU-IMAP. It still stores the mail in mbox format but adds indexes outside the mailboxes that can speed things up significantly.
