I've been playing with Ejabberd http://ejabberd.jabber.ru/ setup was dirt simple and it even has a built in web interface for user management. I do like the spark client from jivesoftware though.

Hi Jason,

  After spending a number of weekends trying to build/find a full-featured
XMPP server, I found jive wildfire (then called jive messenger).  AFAIK,
it is the most featureful open source XMPP server available.  If you can/
will run a java server, I _highly_ recommend it; it just works.
