"Virtual package providing" that's the terminology when a package replaces another one as a virtual package, this is so when a package tries to call, in this case, ubuntu-fonts, then it will install fonts-trisquel, this technique avoid the need to look for all present and future packages looking for ubuntu-fonts and try to change them.
