Try putting ":" after the buttons and change the settings a couple of times,  
for some reason it takes a while to refresh, in the end it should work with  
both minimize,maximize,close: and minimize,maximize,close.

I don't use GNOME, but now that you mentioned I too can't find the align  
setting for the title bar font.
