There is LaTeX (in TeXLive packages). PDF files can be generated using pdflatex, lualatex or xelatex (or dvipdfmx, although it's probably less comfortable). PostScript is usually made using dvips (I rarely see such files, in most cases pdflatex is probably better). Or are you asking for an editor? I use Emacs with AUCTeX, there are many other solutions.
