You are certainly right about the need for more options. The fonts for  
instance are not suitable for older people. Something that GNU/Linux as a  
desktop operating system is just perfect for.

I think what needs to happen is there should be an easy feature to  
lock/unlock customization options. However not one that can be accidentally  
clicked on.  This way the support nightmare is reduced (which is what we had  
with GNOME 2) and advanced users are still easily able to customize the  
desktop or adjust it for less technical users (increase font desktop font  
size without messing about with configuration files).
