This is where all the difficulty in cryptographic protocols starts: why wouldn't the server be able to change the key? The way SSH handles this might be practical for this purpose. Since reading about http://en.wikipedia.org/wiki/Interactive_Connectivity_Establishment I think it's not the only interesting part in this project.
