"Display" in "System settings" should allow you to select among the whole
list of supported resolutions. That said, a better solution (because you
still want the highest resolution when watching pictures/movies/etc.) seems
to be to enlarge the characters. "GNOME Tweak Tools" (in "System settings" as
well) has a scale factor in its "Font" tab.
