What would happen if I proceeded with this? Nothing, immediately. However, on the next autoremove all the GNOME dependencies not set to manually installed would be removed. Unfortunately there's not really anything you can do about this- the Trisquel DE installs as dependencies a whole bunch of things designed to cover a wide range of use-cases so as not to disappoint. You can either switch to another DE, or you'll just have to put up with it. I'm sure you have the disk space.
