I don't know about GNOME apps freezing, but you'll notice a difference when  
data is being retrieved from the SSD-- for example, programs will launch  
faster, and file management will be snappier. I've upgraded my Thinkpad x60  
with an SSD and it's definately faster when it comes to the previously  
mentioned areas.
