Videoconferencing is communicating. It is not possible for the two (or n) ends of the communication to control the software. If one of them host the communication server, then it is harder for an outsider to listen to the communication. It therefore is better for privacy. However, encrypting the stream is even better. Jitsi has such a feature.
Jingle on XMPP (many clients, including Pidgin in the default Trisquel) and
Jitsi (choose the latest version on http://jitsi.org) are options. WebRTC is
an option too (e.g., Firefox Hello is available in Abrowser).
