I don't see anything under the list of keyboard shortcuts defining what opens  
the menu.

I do not see it either. :-S

On GNOME Shell, pressing Super actually does the same as pressing Alt+F1. It  
opens the dash to search among the installed programs (or their windows if  
they are already opened), the files, the contacts, etc.
