Use the one from Ubuntu. ESR does not have any security advantages as it is
designed just to be stable, which is why Tor Browser uses it.
If you don't trust Canonical that is a reason to build from source. I largely
do but you never know.
At any rate the option is there and really easy: you just need to download
the deb-src package and then use the Debian package building scripts. I also
find it is good to have a schedule of rebuilding certain packages I build
from source, every two weeks or monthly, such as the kernel, as it is
something to do to pass the time and you feel like a real nerd which is
something.
