Actually, its not hard to partition the disks.

One is for root, one is for swap.  say, 4GB for swap.

the rest goes to root.

make sure the root partition is bootable, and the swap one has linux swap/solaris type.

Now if you want encryption, that is much harder. it took me a while to figure that out... ;)

Although, only with following the Full Disk Encryption Libreboot guide. ;)

Incidently though, encryption is highly recommended when at all possible.
