To remove MATE completely, see whether its official wiki offers any approach. I never studied how to remove MATE, because it's my favorite desktop environment. (I use KDE less commonly in order to run Krita "natively" on tablets with digitizer pens.)
I did simple searches on packages.debian.org and packages.ubuntu.com. There
was no up-to-date meta package named "gnome-desktop" in Debian. However, I
did find a meta package named "ubuntu-gnome-desktop" in its "universe"
repository. Try to install it and you should have Gnome 3. Once installed,
you might need to undo many customizations made by Ubuntu, though.
