I did simple searches on packages.debian.org and packages.ubuntu.com. There was no up-to-date meta package named "gnome-desktop" in Debian. However, I did find a meta package named "ubuntu-gnome-desktop" in its "universe" repository. Try to install it and you should have Gnome 3. Once installed, you might need to undo many customizations made by Ubuntu, though.

To remove MATE completely, see whether its official wiki offers any approach. I never studied how to remove MATE, because it's my favorite desktop environment. (I use KDE less commonly in order to run Krita "natively" on tablets with digitizer pens.)
