depends highly on the customer and its industry. sometimes you have to
speak to a VAN which translates everything into everything.
in automotive (europe) its common to have ODETTE or EDIFACT. Often every
company speaks its own dialect. Even different plants.
try to make a generic interface with modules for the different standards
and of course dialects.

by the way, there are some transport layers around which you have to
deal with. ISDN is not dead in EDI.

having one standard EDI protocol will not fit the real world.
