do you really talk about multi-tenant or sharing data ?
multi-tenant is not a problem, I do it daily.
Sharing data between entities is always complex and
sharing data over long distance can be a performance problem.

nothing or everything, depending on your choice

If they have separate databases, then
they can run a single process
they can run two processes on the same code
they can run two processes on two separate copies of the code (my
recommendation)

if entities are separate, the less you share, the simpler you are

Tryton is free of charge, which costs do you want to share ?

If you plan to buy some support from some-one, ask them. It is a
contractual issue, not a Tryton issue.

There is no direct relation between size and cost but size do matter of
course. What do you call big and what is tiny for you ?
If you just think about having hundreds of tryton services centralized
in one location, this is what I do in Europe.
