I am inclined here to see this as the correct way to reflect the state of the
sale (purchase).

The legal aspect should be fullfilled with the confirmation steps.

If we see the workflow completed by having all subjects of the contract being
accomplished (which is service provision (delivery) on one side and money
consideration (payment) on the other side), then it is correct to set the state
of the sale/purchase to 'processing' as long as one condition is not met.
