I did evaluate different (mostly web based) alternatives,
haven't found "the exchange killer" yet,
but a look at opengroupware, groupoffice or kolab might help you what  
is possible and what is not.
One client of mine did migrate from outlook to a groupoffice /  
mozilla imap combination.
they use the calendar heavily, and the thunderbird mail.

If anybody succeeds with opengroupware install, I would be happy to  
hear about it.
