How about running anaconda locally on a trowaway box, creating a tarball of the installation, and unpacking that on your remote server? Less hassle than the rpm --root way (especially since anaconda creates some files during install which won't be created by rpms). After unpacking the tarball, you should only need to set up grub and make a proper initrd to get a booting system. (if you install on the same type of hardware, you shouldn't even have to recreate the initrd). Hope this gives you a few ideas to work from..
