I am using Jetty without JBoss. You can configure Jetty to load a webapp from somewhere outside of the webapps directory (tomcat allows for this as well). Also, Eclipse 2.1 M4 allows you to link in folders outside of the workspace - I assume this could be used to work on an application located within the webapps directory of a servlet container (but I haven't tried this).
