I believe the second mail list reference below already 
explained your question. But to be somewhat more specific:

Stylebook is just a tool for converting XML files into
HTML using a predefined styles and patterns.

Cocoon is there for a dynamic conversion. It comes
with a sample application to do XSLtransformations
but IMHO its yet an overkill to place cocoon or parts
of it into turbine. (I have not yet taken a look at
the stylebook conversion procedure, but saw the 
xslt files are there).

Cocoon and stylebook use xerces/xalan for the actual 
transform.

Using cocoon to serve the HTML doc files of turbine
would also be way of an overkill, since these are mainly
static. Cocoon focuses on dynamic producers or conversion
to multiple formats (e.g. HTML, WML, PDF, etc.).

Hopefully this clarifies the usage of xdocs sources for 
turbine and stylebook.

Jason van Zyl mentioned in one of his mails that he would
from time-to-time regenerate the HTML for the turbine
site (when important changes have been doen to the xdoc
sources).
