The Trac syntax has the advantage that there's help for it a click
away when you're editing. RST is much heavier syntax, but is certainly
more capable and many people know it.

I'd say that my inclination would be to use whatever is easiest for
editing and contributions. The wiki is, after all, a "documentation
playground"... any longer-lasting docs need to go into the repository
and become part of the docs proper.
