I just do everything in Unicode. I can't think of any good reason not to (is there a compelling reason besides saving a little disk space?)... IMO, it seems simpler to just keep everything consistent, then you don't have to waste brain power thinking, "this is a String, and this other one is Unicode, so use the String validator here, and remember to use the Unicode validator over there...".
