My favorite tool for this is WebScarab. It is an interactive proxy, so you configure your browser to use localhost as the proxy, and all the traffic goes through WebScarab. It records everything and lets you manually edit requests. There are actually loads of tools like this (Paros, Burp, Spike proxy...) They're not so commonly used among web developers, but a vital tool for security people. Pen testers will use this extensively when auditing a web application.
