Thanks guys, for pointing me to dynwidget (and sending it to me). It is exactly what I'm looking for.
One followup question: is it possible to use validators with it? As in to automatically sanity check the fields and re-display the form if any fail validation. I can setup validators for statically defined forms, but can't clearly see how to get them to behave for this type of form.
