Having seen through the season finale, I think it was a conscious
choice for Raylan to go hatless. I think the hat represented the John
Wayne cowboy who sees and absolute right and an absolute wrong, which
is what Raylan believed at the start of the season. I think, in the
last few episodes, Raylan started to see the shades of gray. I don't
think the Raylan we saw at the end of the season felt like he deserved
to wear the hat... that he finally understood that the hat (and his
beliefs) were from a bygone era.

Or maybe I'm just reading too much into it.
