It was during the interview with Steve Carell - part of The Big Short was shot
in New Orleans and mentioning the city was all Colbert needed. It's from
Monday's show, but there doesn't seem to be a clip of that portion.

Earlier this week Jon got off what I thought was his best line of the entire
show so far - Colbert and his guest (I forget now who) were doing exaggerated
New Orleans accents for some reason, and Colbert looked over and said something
like: "Is this how they sound" and JB, with a nice and, to that point
uncharacteristic sarcastic deadpan, replied something like: "Yes Stephen,
that's exactly what they sound like". This is what I want more from them -
Colbert making fun of JB's outfits and jazziness; JB making fun of how white
and nerdy Colbert is.
