While not the same thing, Conan did reair several of their 'Beyond Borders'
episodes last week.
The Daily Show often does theme weeks, editing together desk pieces along a
common subject (which is what they're doing this week). They've also done
shows featuring recent work from their correspondents.
I vaguely remember Colbert's Late Show trying to do something like you suggest,
even incorporating unaired interview segments and having a new intro from
Stephen in place of the cold open. But I don't think they've tried it for over
a year.

Johnny and run “Best of” shows while they’re on extended vacation?
Instead of straight reruns from a month ago, surely someone could go in and
edit together “best interview segments”, “best musical segments”, and “best
desk pieces” from the last few months. Colbert has a weekly clip segment on
Friday nights, but it needs to occur to someone to make it something that can
be promoted at the end of August.
