Good choices so far, although I'm not very familiar with the VS Ultra.  It 
should have blind scan capability.

The bigger dish the better, and the mount depends on your roof and your view of 
the southern sky.
If it's going on your roof, you'll have to climb up there to tune it, tweak it. 
 I started with my dish on 
the roof and finally, after several trips, had to move it to a pole in the back 
yard.

The type of  motor depends on the size of your dish.  I have a 90cm dish with a 
Satcontrol SM3D22
and am very happy with it. A friend has a STAB motor and it works fine too.

Many retailers offer inexpensive meters free or at discount, or in a kit, when 
you buy your gear.
I purchased an ACUTRACK22 version 1 for $88 on eBay, but a simple analog meter 
will work fine.

The connectors on the orphan coax may be corroded and should probably be 
replaced

Good Luck.  Don't get discouraged on your install.  Make sure your mount is 
"plumb".
