Download the kernel and give a make menuconfig.
This will generate a
.config file containing your selections made from the menuconfig.
Linux kernel is supported on many hardware and not restricted to Intel
x86.

the kernel that comes with distros are mostly tweaked for optimal
performance for their distribution.
