/sbin/service sshd stop will stop the sshd service. To stop it auto
starting on reboot it depends on perhaps what rellevel you are running on
and how it was started originally etc
you can just remove the link from /etc/rc{rellevel}.d The link will be
something like s55sshd
Or you can use your menus in the X gui to do it.
If you have it started in your rc.local (/etc/rc.d/rc.local) you can delete
the line out of there that starts it.
