We did this a few months ago.

Some things that helped us:  Make sure your paths are the same on both
machines, this will save you some headaches.  We found it simpler to
copy the accounts to a temporary location on the new server and then
copy the account to its permanent location. This helped us set up the
inherited file and share permissions correctly as noted below.  Then use
UniAdmin to create the accounts on the new server.

The old DOS xcopy command works great to copy the account directories.  

One very important thing to pay very close attention to:  File and
Directory NTFS and Share permissions.  Make sure that the permissions on
the new server exactly match the permissions on the old server.  That
one bit us in the you know what!
