The reason you're seeing conflicting advice is that the Itanium is "all things to all men", so endianness is a runtime configuration!
Apparently UX is big-endian on Itanium (like on PA-RISC) while linux is little-endian (like on Intel). You'll need to check with HP which endianness it is. The easiest way to deal with it is either to use uvbackup/uvrestore, in which case you don't care, or copy a test account over and see whether it works or blows up!
