Mike, I believe biztalk has a webservices (or possibly just XML over HTTP) connector.
I would just do sockets/XML straight from UV. As I recall, the biztalk interface I saw defines was HORRENDOUSLY complex XML but only because it was automatically generated so the XML was correct for a business process, just not obvious or elegant.
