You should be able to get the source from: view-source:resource://ubiquity/standard-feeds/search.xhtml then go to about:ubiquity?cmdlist and disable the normal google command, and go to about:ubiquity?editor and copy in your modified version in the editor
After that, "google" should refer to your italian version I hope that made it clearer.
