I've been having a look online for network scanning options and it seems that
the sane project supports this option (see - http://www.sane-project.org/).
From what I gather I should be able to connect a supported scanner to my
file/print server and scan from it via my networked Linux *and* Windows
machines.

I've found a HP multifunction (printer/scanner/copier) that is advertised as
Linux compatible so hopefully I'll be able to get network printing *and*
scanning with this multifunction device.
