Not really an answer to either of your questions, but I find myself more and more frequently needing to install Ubuntu on machines without optical drives (enterprise blade servers in particular). However these do usually offer USB install support. While there's a fairly easy way to get a standard Ubuntu CD install onto a USB pendrive, it is a tedious process. It would be nice to have some sort of combination of a USB installer image, and perhaps also a jigdo/rsync-esque way of updating the packages on the installer from time to time. And as far as different distros go, USB pen drives are climbing in size and shrinking in cost. 8GB devices hold nearly double what a standard DVD does, which gives equal opportunity to build an all-in-one "*buntu" installer, as per your suggestion (which I think is more than reasonable, by the way).
