Ok, turns out bluez 5 built fine in an qemu-based emulated armhf schroot with sbuild. So for anybody interested, I have uploaded armhf debs for bluez 5 and pulse 5. They are at http://people.canonical.com/~themuso/pulse-5.99-bluez5-armhf.
