Use *como usuário normal* o seguinte comando: sudo gedit /etc/X11/xorg.conf
Não execute um comando que use o X quando estiver logado como root num terminal, dará erro, pois não há uma sessão do X usada pelo root. Com o sudo, ele executa como root, mas usa a sessão atual (a do usuário normal). Por isso você não conseguiu abrir com o gedit.
