Você também pode tentar rodar o Live CD do Xubuntu... é mais leve que o Ubuntu... ou então seguindo a linha de raciocínio do Raphael Menezes... instala o Server sem o X e depois instala o XFCE que é a interface gráfica padrão do Xubuntu...
