After more research, I believe this is still a problem. However, it seems to be intermittent. It may be related to connectivity speed and/or bandwidth availability. I am viewing files in nautilus via sftp. When I am on the same LAN as the files, gedit and others appear in the contextual menu and can open the files. However, when I am accessing the files through the internet on a slower connection, gedit and other text editors usually don't show up in the menu or in the "Open With" dialog. I hope this extra information helps.
