I recently noticed that I can force the icon of an .avi file to be
updated by choosing 'Rename' under the right-click menu that can be
summoned when the file is selected in the file browser. If I actively
make a change to its name (i.e. change it from 'test.avi' to 'Test.avi'
for instance), sometimes the file will regain a 'picture'. Sometimes
this doesn't work however. Note that it is necessary to actively make a
change for this to have an effect - just selecting Rename and not
changing anything in the name doesn't work.

As this occurs outside of AcidRip, it looks like the problem is in
Gnome/Nautilus after all?
