Hi, tried the same and found the following: After opening the document there is no document-language set (-none- is displayed in the indicator field at the bottom, right). You have to select the complete text and select "English" instead of "(non-proofing)" from the language list in the Tools -> Set-Language menu. After closing the dialog everything works as expected.
But I haven't found an Option to set the default language of new documents to anything else than the system (GNOME) language.
