I don't know how to redirect with sudo. I had to run: sudo bash
this gave a root prompt, then I could run: echo deadline > /sys/block/sda/queue/scheduler without running sudo again (running bash with sudo makes the prompt root until you type exit). I am curious about your fstab though, that was what really changed things for me. Also, to you have lots of small files or a few big ones? I can try testing.
