Ah, this is still happening on 8.10 for me.

Specifically:
- padevchooser tends to segfault if the default sink disappears, e.g. if you've 
set the default to be a network host and you change networks
- streams using a network sink directly (i.e. not using tunnels) freeze if the 
sink dissappears, e.g. if you change networks,  and generally don't recover 
unless you kill the process that opened the stream
- if you're using tunnels, this seems to work fine as the rescue module seems 
to rescue the streams
