That is a a minor patchover and does not solve what I am trying to do. I know how to edit the mime DB myself. My issue here is that changing the "Open With" option simply overrides the default application handler. It doesn't change the underlying mime type. For example: you could right click on HTML files and tell it to try to open them in GIMP. (It would fail but that's besides the point.) Open the file properties pane after the fact. You'll notice that the underlying MIME type for files ending with '.html' is STILL text/html and all the associated metadata with text/html files remains the same.
