I'm not experiencing the random crashes anymore (on any Ubuntu versions). On further examination, I managed to track it down to a faulty GPU fan causing the system to overheat (duh!).
I was also seeing this problem on a laptop. Turns out that the laptop would remain on 24 hours a day. I removed the battery (as it was permanently plugged in anyway) which lowered the temperature, which caused the crashes to stop. In other words, the data I provided earlier in order to assist in the troubleshooting will only show how a system looks while overheating - so please disregard it when trying to get to the bottom of the real bug. Hope I didn't encourage anyone to waste time barking up the wrong tree..
